Ingredients
Paneer – 400 Gms
Oil – 2 Tbsp
Ghee – 1 Tbsp
Whole Spices
(Cinnamon, Cardamom, Clove, Star Anise & Bay Leaf)
Shahi Jeera – 1 Tsp
Onion – 2 Nos Finely Chopped
Tomato Puree
Garlic Paste – 1 Tsp
Ginger Paste – 1 Tsp
Turmeric Powder – 1/4 Tsp
Kashmiri Chilli Powder – 2 Tsp
Cumin Powder – 1 Tsp
Coriander Powder – 1 Tsp
Besan Flour – 2 Tsp
Pepper – 1/4 Tsp
Salt
Whisked Curd – 1 Tbsp
Garam Masala – 1 Tsp
Sugar – 1 Tsp
Water
Kasuri Methi
Green Chilli
Ginger Julienne
Chopped Coriander Leaves
Method:
1. Take paneer cubes in a bowl. Add turmeric powder, chilli powder, pepper powder and salt.
2. Mix well so that these spice powders coat the paneer completely.
3. Take oil and ghee in a wide kadai and add cinnamon, green cardamom, black cardamom, cloves, star anise, shahi jeera and bay leaves, Mix well.
4. Add in onions and roast them until they are nice brown in colour.
5. Then add in the ginger garlic paste and mix well.
6. Once the rawness is gone in the ginger garlic paste, add turmeric powder, Kashmiri red chilli powder, cumin powder, coriander powder, besan, salt and mix well.
7. Add tomato puree, mix and cook the gravy for 10 mins.
8. Once the oil separates from gravy, add in the whisked curd and mix well.
9. Then add garam masala and sugar. Mix well and add water. Cook for 5 mins.
10. In the meanwhile, take a pan, add ghee and gently drop in the paneer pieces. Roast them until they are golden brown on all sides.
11. After 5 mins, add some crushed kasuri methi, slit green chillies, ginger juliennes, chopped coriander leaves and fried paneer pieces.
12. Mix and cook the curry a minute or two. Turn off the stove and transfer the curry to a serving bowl.
13. Delicious Dhaba Style Paneer Curry is ready to be served hot with roti, phulka or chapati. You can also enjoy this with mildly flavoured rice recipes like Jeera rice or Matar pulao.
